2 oz Mrs McCartney's Maharishi Peach Wine
2 oz Peach Schnapps
1 oz Bourbon (optional)
Splash simple syrup
Sweet Iced Tea & Pellegrino to finish
Segment of grilled peach
Honey to taste, Thyme to garnish, Ice Cubes
Leaving the skin on, cut a peach into 8 segments, discarding the pit. Heat a grill pan (to make the grill marks) and brush lightly with coconut oil to stop the peaches from sticking. Place the fruit, flesh side down, at a 45 degree angle to the grill. Grill until marks are visible. Spin the fruit to get the cross-hatch design. Flip and repeat on the other side. Remove from the grill and dab off the coconut oil with a paper towel. Drizzle with honey and set in the refrigerator to cool
Combine all alcohols in a cocktail mixer with ice. Shake well. Prepare a tall glass with stems of thyme and distilled water ice cubes. Strain mixture into glass, top off with a splash of sweet tea and Pellegrino and garnish with chilled, honey drizzled peach. Wait for Austin Powers to ring.
Serving accompaniment suggestion:
Sweet Peach Bruschetta : French or ciabatta bread rubbed with garlic, grilled, drizzled with a lemon olive oil and topped with prosciutto and peach salsa.
